First time in a while, I cooked myself dinner. Tonight’s menu was an omelet. Usually, I would crack two eggs and pour in a good amount of heavy cream, but since I was out of cream—and quite hungry—I opted for three eggs and a splash of milk instead. I chopped up onions, mushrooms, and tomatoes, sautéed them in olive oil, and used them as a topping for the eggs. We were out of basil, but there was some arugula meant for salads, so I generously piled it on and sprinkled some cheese over the top. You never really know if the mixture has cooked through until you flip it; there is a certain sense of satisfaction in flipping it based purely on intuition and revealing a perfectly crispy, golden-brown surface. I am fond of such moments of reveal.

Preparing my own meals is certainly fun, but it is also quite a hassle. I’m not making anything elaborate, yet I always find myself rushing around because I’m not entirely comfortable in the kitchen. I had wanted to take cooking lessons over the summer, but when the time came to actually start, I found it too much of a bother and put it off again. For now, I must at least learn how to make kimchi jjigae and doenjang jjigae before I leave.
